When surveying many lands, the French decided to choose Buon Ma Thuot city of Dak Lak province as the first land to grow and breed coffee beans. Dak Lak has a high mountainous terrain, fertile soil, alluvium, and moderate temperature being suitable for many coffee varieties to thrive. Since then, pure coffee Dak Lak was born.
In the first phase of the plan, the French chose Buon Ma Thuot as the center of a 10-km surrounding area to cultivate Robusta coffee varieties. Therefore, the places such as Ea Kao, Cu Ebut, Tan Lap, etc. become famous with Robusta coffee to strengthen the flavor. Because of being selected as the origin of coffee in Vietnam and having industrious and diligent people, Dak Lak quickly thrived. According to 2006 statistics, Dak Lak was the place with the highest average coffee yield in the world of 2.5 tons/ha and a total output of 435,025 tons, contributing to making Vietnamese coffee output ranked second among exporting countries. Dak Lak has opportune conditions to create the highest quality coffee with the most characteristic flavor, highly appreciated by fans and professionals. It has recorded Vietnam to the top Robusta coffee exporters list. That is why people often call this lovely land the "Capital of coffee".
In Dak Lak, almost every district grows coffee with all varieties consisting of Robusta coffee, Jackfruit coffee, Robusta coffee, etc. Coffee plants seem to occupy a unique position, which no cultivars can compare in this red basalt area. For each person in this place, coffee trees can be considered as a poverty alleviation tree when so many households go up, bringing Buon Me Thuot - Dak Lak from a poor province to now a bustling city.

How to enjoy
In Dak Lak, with the chilly weather every morning, people often use black coffee and coffee mixed with sugar or milk. Because of cold weather, the sellers soak the coffee cups in hot water and give them to customers or boil thick glasses to make coffee. On summer days when the weather is quite hot, people use black coffee and iced milk coffee. In Dak Lak, especially in Buon Ma Thuot, the taste of coffee is really strong. If adding ice, the sellers will only give a little small ice so that the coffee is still very harsh. Therefore, the drinker often sips slowly and always uses with a cup of tea.
Previously, the people of Dak Lak used to use filter coffee. Until now, this is still considered the most enjoyable way to rejoice in coffee because you can listen to music, watch the street or chat with friends while waiting for drops of black coffee to fall slowly. However, this method is so sophisticated and time-consuming that not everyone knows thoroughly and can follow the steps properly to get a perfect cup of coffee. They need to balance water and coffee quantity and create the right compression. Therefore, people turn to process coffee by wrapping it in cloth, cooking in a pot to produce coffee water quickly, and make full use of the coffee. Then, the water is put into a pot and simmered until it becomes thicker and darker.
